Cracked wheat, also known as dalia, can be used to create a healthy version of Dodha Barfi.
Ingredients
- 1 cup Butterfly Cracked wheat (dalia)
- 1 cup milk
- 1 cup condensed milk
- 1/2 cup ghee (clarified butter)
- 1/2 cup sugar
- 1/2 teaspoon cardamom powder
- Chopped nuts (almonds, cashews, pistachios) for garnish
- A pinch of saffron strands (optional)
Instructions
Step 1
Wash the cracked wheat (dalia) thoroughly and drain the water. Let it sit for a few minutes.
Step 2
Heat a heavy-bottomed pan and add ghee to it. Once the ghee melts, add the cracked wheat.
Step 3
Roast the cracked wheat on low heat, stirring continuously, until it turns golden brown and emits a nutty aroma. This should take about 10-15 minutes.
Step 4
In another pan, heat the milk and bring it to a gentle boil. You can add a pinch of saffron strands to the milk for added flavor and color.
Step 5
Once the cracked wheat is roasted, add the hot milk to it, little by little, while stirring continuously. Be cautious as it might splutter.
Step 6
Continue to cook the mixture on low heat while stirring to avoid lumps. The cracked wheat will absorb the milk and start thickening.
Step 7
Add condensed milk and sugar to the mixture. Keep stirring as it thickens further.
Step 8
Continue to cook and stir until the mixture leaves the sides of the pan and becomes a thick, fudgy mass and add cardamom powder and mix well for a delightful aroma.
Step 9
Remove the mixture from heat and transfer it to a greased plate or tray.
Step 10
Flatten the mixture evenly with a spatula and garnish it with chopped nuts of your choice. Allow it to cool and set for a few hours. Once it has cooled and solidified, cut it into square or diamond shapes.
